Huber-Verdereau

Domaine Huber-Verdereau was founded by Thiébault Huber in 1994, but originates in the 19th century with several generations of the Verdereau family in Volnay, including Thiébault’s grandfather Raoul Verdereau.  The domaine encompasses 9.5 hectares, with holdings in Volnay, Pommard, and Meursault.  Since 2005, Thiébault has converted all holdings to organic and biodynamic farming, and is Demeter-certified.  Thiébault is a rising star in Burgundy and his joyous, thoughtful manner is reflected in his focused wines.

He adheres to minimalist intervention in winemaking, with no battonage, filtration only when needed, 20-30% new oak, and aging of 12-14 months for the Cru wines. In terms of work in the cellar, Thiébault has a gentle touch, using 350 and 500 liter barrels, minimum SO2 and no lees stirring. He vinifies and bottles separately wines coming from each parcel, to try and express each terroir. His whites are precise and his reds are wonderful expressions of Pinot Noir, showing lovely red fruit and silky texture.

  • Volnay 1er Cru Le Clos des Chênes

    66 year-old vines in the most desirable part of the slope. Double sorted both in the vineyard and on the table. 100% de-stemmed. A full-bodied and spicy structured wine.

  • Volnay 1er Cru Les Fremiets

    33 year-old vines. Les Fremiets is one of the finest terroirs in Volnay. Classic elegance and refinement. A surprising aromatic intensity mixing fruit and flowers.

  • Volnay Les Robardelles

    Truly ancient 75 year-old vines. 1er Cru adjacent. Cold soaked for 3 days, then alcoholic fermentation without pigeage. Low-vigor vines. Body and intensity.

  • Volnay

    From three plots with vines spanning 15 to 50 years of age. Two near RN 74, lower on the slope and one high up, just under the woods. Prototypically Volnay. Elegant. Refined.

  • Pommard Le Clos du Colombier Monopole

    Farmed by horse and by hand. The perfect marriage between the typicity of Pommard and Volnay. Notes of spices and pepper expressed very finely and with roundness.

  • Mercurey 1er Cru Les Combins

    Fermented and aged in 350L and 500L barrels. No stirring, maturing on lees for 10 months. Proper reduction. Taut. Minerals. Sea spray. Driven by savory acidity.

  • Meursault En Dressolles

    63 year-old vines grown mid-slope. Near the 1er Cru Les Cras. Aged 12 months on the lees. No bâtonnage. Reduction. Matchstick. Stone. Length.

  • Cuvée N°1 "Les Lameroses"

    True baby-Meursault just meters from Village wines of great repute. Chardonnay with hints of lemon, grapefruit, and wet rock. Very fresh and at the same time rounded on the palate.
