For five generations Violot-Guillemard – now headed by Thierry – has farmed vineyards in and around the village of Pommard. The domaine has always known that great wines can only come from the best grapes. To that end Thierry takes great care in tilling his land and vineyards have been under organic management since 1999. As a proud successor of his ancestors’ heritage, he strives to keep the terroir healthy so its quality can be appreciated in each of the wines.
Thierry – alongside his son, Joannes – approach winemaking choices to ensure that they truly reflect the terroir: no yeast inoculation, no reverse osmosis, very few technical interventions, and not too much new oak. These endeavors guarantee that winemaking won’t overshadow nor alter the taste of the variety and the terroir.
The appellation of Pommard is known to connoisseurs of fine Burgundy as a region with promisingly high-quality wine. The village, 250 meters above sea level and 4 kilometers from Beaune, is nestled amid rolling vineyards and clos. One of the most famous vineyards of Pommard is Thierry’s Monopole “Derrière Saint-Jean” which lies inside the clos of the domaine and shares land with the family swimming pool!
Thierry Violot-Guillemard owns 15 acres of prestigious vineyards in the appellations of; Pommard, Volnay, Meursault, Monthelie, and Beaune. The winery has also begun to work with a select group of growers wherein Thierry can control the farming to his exact standards.
